Crock Pot Cranberry Applesauce

This week's recipe is a nice treat that uses ingredients of the season, Crock Pot Cranberry Applesauce! I always use my crock pot now for making applesauce, it is so easy, and not as labor intensive when cooking, in my opinion. I'm also a lover of all things cranberry, so I thought I'd give this recipe a whirl this year. I had a bunch of orchard apples in my pantry that were starting to go soft, so that means applesauce time in my house! With this recipe, you add the brown sugar to taste, as it really depends on your preference and the type of apples you use. Cranberries are naturally tart, so some sweetener is likely needed. My apples were a mix of Macintosh and honey crisp, and I used a half cup of packed light brown sugar, and it was perfect. My 2 year old gobbled some up at breakfast this morning, so if she likes it, it's a good recipe, LOL!

Crock Pot Cranberry Applesauce

  • About 5 lbs apples, peeled, cored and sliced
  • 1 bag fresh cranberries (12 oz)
  • 2 cinnamon sticks
  • brown sugar, to taste (add a quarter cup at a time until you get the sweetness you want)
Peel, core & slice apples, and place in your slow cooker. Pour in the bag of fresh cranberries and throw in the cinnamon sticks. Cook on low for 6-8 hours.
When done, remove the cinnamon sticks and mash the applesauce in the crock, or use an immersion blender, depending on whether you want a chunky or smooth sauce. Add some brown sugar, 1/4 cup at a time and taste it until you get the desired sweetness you want.
Store in an air tight container in the refrigerator for up to a week. You can also freeze or can this. I canned it, and got 6 pint jars out of the recipe.

Slow Cooker Sauced Chicken





This week’s recipe is mainly for the sauce. I got the recipe from a friend, and she says they use the sauce on many things, but it is especially good on chicken and ribs. I made it with chicken breasts, because that is what I had on-hand, but you can use any cut of chicken you like, bone-in or out, fresh or frozen. It just seems to be a good sauce for many different meats. Plus it is easy to make! I had everything in my pantry for it, I love recipes with basic ingredients that are so versatile and easy to whip up! I served the chicken with sauce over white rice, and it was delicious.  If you try it on ribs, let me know how it is!


SLOW COOKER SAUCED CHICKEN

  • 1 can tomato soup
  • 1/2 cup brown sugar
  • 1 tsp salt
  • 1/2 cup white vinegar
  • 1 Tbsp soy sauce
  • 1tsp chili powder
  • 1 to 1.5 pounds chicken pieces of your choice
Place the chicken in your slow cooker. Mix all the other ingredients together in a medium bowl and pour over the chicken. Cook on low for 6 to 8 hours.

Slow Cooker Honey Baked Ham

With the chill in the air and leaves on the ground, it’s time to pull out that crock pot! And back by popular demand, is Julie’s Crock of the week! Every week during the winter months, Julie Jacobs will share a slow cooker recipe to help warm up your belly.

Here comes Christmas! So, this week’s recipe is geared at helping you with your holiday meal. My mom’s side of the family usually enjoys a ham for Christmas dinner, and I recently came across this recipe online and thought I would give it a go. Yes, it’s true! Ham in a crock pot! Slow Cooker Honey Baked Ham. I have to give a shout out to where I found this recipe, it is a fantastic cooking blog called “Six Sister’s Stuff.” You really need to follow them, so many delicious recipes! I also spaced out and forgot to take a photo of my ham yesterday when I made it, so I am posting their pic from their blog. Check them out! And wow, did the house smell good yesterday while this was cooking. Slow Cooker Honey Baked Ham

7-10lb spiral ham (mine was about 8lbs)
2 Tbs brown dijon mustard
1/2 cup brown sugar
1/2 cup honey
1/4 tsp nutmeg
1/2 tsp cinnamon
1/3 cup water

Spray your slow cooker with cooking spray. In a saucepan, mix together the remaining ingredients EXCEPT the water. Simmer together for a few minutes until all is melted together. Put the water in the crock with the ham, and then pour the saucepan mixture over ham.

Cook on low for 6-8 hours, basting every hour or so.

If you would like, you can make a glaze/gravy from the juices when your ham is done. Put the juices in a saucepan with 2T cornstarch and 1T water. i skipped this step because the hame was so good as it was! Again, this pic is not mine, it’s from the Six Sister’s Blog (link above!)

Slow Cooker Autumn Applesauce


Here is Julie's Crock of the Week from the week of October 10, 2011:

Slow Cooker Autumn Applesauce

14 medium apples, peeled, cored & cut into chunks (I used Jonamac apples)

1/3 cup apple cider

1 teaspoon cinnamon

1 teaspoon nutmeg

1/4 cup packed brown sugar

Place the apples in the crock pot. Sprinkle brown sugar and spices on top, and stir to get the spices on all the apples. Pour cider in. Cook on low for 7-9 hours. Makes about 6 cups.

I am not a fan of really chunky applesauce. I take a whisk to the mixture when it is done to make it smoother. But it still has a pretty substantial consistency to it. Whatever you prefer!
