Slow Cooker Cheesy Grits with Garlic Butter Shrimp



Ingredients
Grits:
  • 2 cups uncooked stone-ground grits
  • 6 cups water
  • 1/4 cup heavy cream
  • 1 1/2 cup sharp cheddar cheese, grated
  • 1/2 cup Parmesan, grated
  • 3 tablespoons butter
  • 2 teaspoons salt
  • 1 teaspoons freshly ground pepper
Shrimp:
  • 24 large shrimp, peeled and deveined
  • 1 1/4 sticks butter, sliced into pats
  • 3 cloves garlic, minced
  • 2 1/2 tablespoons olive oil
  • salt and pepper, to taste
Directions
  1. Combine grits and water in slow cooker and let grits settle to the bottom. Skim any solids off the top of the water. Cover and cook on low for 7-8 hours or overnight.
  2. Stir and add in cream, cheeses, salt, pepper and butter.
  3. Preheat oven to 350ยบ F.
  4. Toss shrimp in olive oil and minced garlic, and season with salt and pepper. Spread out on a baking tray.
  5. Place in oven and cook for 6-8 minutes, or until shrimp is pink, opaque and cooked through.
  6. Add butter directly to baking tray and toss shrimp in it.
  7. Spoon grits into bowls and add shrimp and butter on top.
  8. Serve warm.

Slow Cooker Eggnog Cranberry Steel-Cut Oatmeal

Ah, Christmas morning. The morning where everyone wants a delicious special breakfast, but nobody want to cook one! Spend more time with your family and make breakfast the night before! This week's recipe is Slow Cooker Eggnog Cranberry Steel-Cut Oatmeal! Now, there are two kind of people in this world: Those who eat oatmeal and those who don't. If you are not generally a fan of oatmeal, this recipe will not change your mind, even though it is good! Haha! But, if you enjoy oatmeal, this is a nice twist on the regular stuff. I topped mine with some extra cranberries and some chopped pecans, and it was a nice, filling dish. I would recommend doing this if you have a digital crock that can switch to "warm", otherwise it may get a bit overdone on the edges if you cook it overnight. But if you are up late and plan to get up early (about 6 hours), then you are fine if you don't have a digital one! I cooked on low for 6 hours and then my crock switched to warm for a few hours and it was fine. You could probably cook it on high for 2-3 hours too, if you just get up early enough.

SLOW COOKER EGGNOG CRANBERRY STEEL-CUT OATMEAL

  • 4 cups eggnog
  • 4 cups water
  • 2 cups uncooked steel-cut oats
  • 1 cup dried cranberries or Craisins
  • 1/2 tsp salt
  • 2 tablespoons chia seeds or ground flax seeds
  • (optional toppings: chopped nuts, cinnamon, nutmeg, additional eggnog or cranberries, etc)
Spray your slow cooker with cooking spray. Put all the ingredients in the slow cooker (except optional ingredients) and mix together. Cook on low for 6 hours or until oats are cooked and softened and the edges have browned a bit. Spoon it up in bowls to serve and add additional toppings if desired! Merry Christmas!

Slow Cooker Ham Tot Breakfast Casserole

‘Tis the season for overnight holiday guests! Or just for more hearty breakfasts to warm your belly and carry you through the day. This dish is perfect if you have some family or friends staying at your home for the holidays, for a holiday brunch, or for Christmas morning, especially since opening presents may come before breakfast that day, if you have kids in the house! Eliminate the need to prep breakfast, and enjoy the time with your loved ones with this week’s “Julie’s Crock of the Week,” Crockpot Ham Tot Breakfast Casserole! I did a similar recipe back in season one of Julie’s Crock of the week that used shredded potatoes, but this one uses tater tots (which are their own food group, right? ha!).
Now, this would work best if you have one of those fancy programmable crock pots (I have asked Santa for one this year), because you can make it go to a “warm” setting at 4 or 5 am so it doesn’t scorch at all. I just cook it overnight, but my crock has a hot spot that does make some crispy edges. BUT, I just scoop that part off, and the rest is fine to eat :) Just a heads up! You know your own crockpot the best. Also, another “hazard” of this is that the delicious smell of breakfast may wake you in the middle of the night and confuse your mind and body, LOL!
Also, the tater tots WILL NOT HOLD THEIR SHAPE. So, don’t expect that to happen. If you overcook, it may become too mushy for some, but I liked the consistency. My husband said he really enjoyed it, too. This original recipe is called “bacon tot casserole” but that is with Canadian bacon, which I think is more like ham. So I changed the name :)

Slow Cooker Ham Tot Breakfast Casserole

  • 1 lb. frozen tater tots
  • 1/2 lb diced Canadian bacon or ham
  • 1 green bell pepper, chopped
  • 1-1/2 cups shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 6 eggs (or 1.5 cups egg substitute)
  • 1/2 cup whole milk
  • 2 Tbsp flour
  • salt & pepper
Use a 4-5 quart crock pot for this. Layer ingredients in order: one third of the tater tots, bacon, onions, green peppers, and cheeses. Repeat layers two more times, ending with cheeses. In a medium bowl, combine eggs, milk, and flour and beat with whisk or egg beater until combined. Season with salt and pepper to taste. Pour mixture over layers in crock pot.
Cook on low for about 6 hours. Could be less, could be more, depending on your crock pot. If you have a programmable one, I’d set it on low for 4 to 5 hours, then switch it to warm until you wake up to eat it.

Crock Pot Apple Butter

This recipe was the result of timing working well with two things last week. First, I had too many apples in my pantry from a few orchard trips in October that were going soft. Second, I got a new toy! An immersion blender! I have wanted one for a while and found a great deal for one online, and it came in the mail last week. So, I had the perfect combination to try to make my own apple butter! And let me tell you, it’s REALLY delicious, it turned out better than I expected. And don’t fret if you don’t have an immersion blender. I prefer smooth apple butter, but you can just enjoy it chunkier, or throw it in your blender, too. It tastes awesome on warm biscuits, toast, crackers, english muffins, etc.! And the best part is how this makes your house smell all day! So wonderful!

CROCK POT APPLE BUTTER

  • About a dozen medium apples, peeled, cored & diced (I used 18 small-medium, and got about a pint and a half of butter)
  • 1/2 cup water or apple cider (I used cider)
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
Place apples in your crock pot, add in all other ingredients. Give it a good stir to coat all the apples with spices. Cook on low for 8 hours or high for 4 hours. The process is similar to making applesauce, except you need to cook it down more to a thicker consistency. After the initial cooking time, put (or keep) the crock on HIGH, and either vent the lid with a wooden spoon, or remover the cover altogether, and cook for another hour or two, checking consistency. It needs to thicken up to become apple butter.
When it cooks down to a thicker consistency than apple sauce, you can give it a good mash if you want it chunkier, or you can take the immersion blender to it to smooth it out. Store it in jars or plastic containers in the fridge.

Apple Pie Breakfast



OK, this week, I am doing another breakfast/brunch treat! The hashbrown breakfast casserole I posted a few months ago was a big hit, so I thought I would do another breakfast crock. This one is actually pretty healthy too, which is always a plus, especially if you are trying to lose those holiday pounds :) It uses steel cut oats (also called Irish or Pinhead oats), which are supposed to be the healthiest of oats! Don't use rolled oats, as they will just turn into mush. Unless you like mush, then maybe it would work! Now, the original recipe for this says you can cook it on low overnight 7-8 hours without stirring a lot, but that you need to add an additional cup of liquid for that. Honestly, I don't think it would work well, but you can try it. I prefer the 2-4 hours on high, which could make for a nice late morning weekend breakfast or brunch. Also, peeling the apples is optional, I left the skin on this time, just because I was lazy! It all depends on your taste preference. For my taste, I also sprinkled on some brown sugar when serving, because it isn't quite sweet enough for me, but the kind of apple you pick effects that too. I used Pink Lady apples, because that is what I had onhand, but that is a pretty tart apple.

Apple Pie Breakfast
1 cup of steel cut oats
3 medium sized apples, diced or thin sliced
1 cup apple juice
3 cups water
1 teaspoon cinnamon
Combine all ingredients in slow cooker and cook for 2-4 hours on high or 4-6 hours on low until it reaches the consistency that you like. Be sure to stir every hour or so. Makes six 1 cup servings. Leftovers last for a few days in our house.

This recipe even has nutritional info for you! Here ya go! Each 1 cup serving (before any additional toppings) is: 115 Calories; 1g Fat; 26g Carbs; 2g Fiber.

Hashbrown Breakfast Casserole



With Thanksgiving this week, and Christmas just a month after that, I thought I would share a crock pot recipe that will help you if you have to feed breakfast to some company staying with you during the holidays. That's right, breakfast! In the crock pot! Amazing! Or this would also work for a holiday brunch you may be having or attending. Now, the recipe in itself isn't anything mind-blowing, it is pretty basic ingredients, but the fact that it is ready when you wake up, and that people can help themselves on their own (sometime hectic) holiday morning schedule, is the great thing about it. Be warned that you will smell this in the middle of the night whenever you wake in bed, if you choose to cook on low overnight. It smells great, but I think it made my body wake up earlier than I wanted to on a weekend morning! Haha!

Hashbrown Breakfast Casserole

Cooking spray
1 - 30oz package frozen shredded hashbrowns
12 eggs, whisked
1 cup milk
2 Tbsp seasoning salt
1 tsp black pepper
2 cups shredded cheddar cheese
1 lb. COOKED sausages, cut up or ground up (I used ground turkey breakfast sausage, or you can use traditional sausage links or patties) OR leftover ham, diced
1/2 onion, diced
1 green bell pepper, diced

Use a 6 quart slow cooker. Spray the inside of the stoneware with cooking spray (don't forget to do that!). Dump in the whole package of shredded hash browns, breaking up any clumps. In a medium mixing bowl, whisk the eggs with the milk, then add seasonings, meat, cheese and veggies. Pour everything on top of the hasbrowns in the pot. Cook on low for 6-8 hours, or high for 3-4. The casserole is done when the eggs are fully cooked and the edges start to brown a bit.
